The best thing to do with brown bananas is make banana bread! I like to add a little extra to my banana bread and make it fancy. I LOVE this Strawberry Banana Bread recipe from Two Peas and Their Pod, it comes out perfect. I chose this recipe because I've made a Meyer Lemon Pudding Cake from Two Peas and Their Pod that was BOMB DOT COM, so I like and trust blogs that I've successfully made recipes from before. It did not disappoint!
Easy Peasy - How to Make Banana Bread
Banana bread is one of those recipes that's fairly easy to whip together. Cream butter and sugar, mash bananas, mix ingredients, pour and bake. Adding chopped strawberries changes the chemistry of the mixture because there is added moisture from the strawberries that makes the batter and bread wet. No dry banana bread here. Also, don't skip tossing the strawberries in flour before mixing into the batter because that will help them stay evenly suspended in the batter while baking.
The recipe is still delicious AF as is but after making this recipe I have a few suggestions/ideas:
Toss the chopped strawberries in a little sugar and let it sit in a bowl for the liquid to seep out. Then strain the liquid off and use the fruit. Similar to the method when making the fruit for the Strawberry Rhubarb Pie.
Instead of fresh chopped strawberries, use the freeze dried strawberries from Trader Joe's.
Add peanut butter chips! Then it'll be like a peanut butter and jelly banana bread.
I made three mini loaves using Wilton Mini Loaf Pans from the batter. Or you could use one regular sized loaf pan. But I like the minis because they're so cute and chicken-sized.
If you don't eat them all right away, wrap them up in an airtight container, and store in the refridgerator to keep fresh.
Egg-cetera - Baking With Egg
Two Raspberry eggs were used in this recipe. Raspberry (the black and white Plymouth Barred Rock) lays the large pink eggs. Most recipes call for large eggs and hers are the only large ones I have. The other chickens lay medium sized eggs. Egg size and volume is important in baking because it adds structure and strength as well as leavens and lifts baked goods, especially with cakes because it's what helps make them rise to be fluffy and soft.
The spiral egg holder you see in my videos is called an egg skelter. They're great for keeping eggs in chronological order.
